Did I mention that I learned something this weekend?
Don't mix hot or warm melted chocolate with cold whipped cream frosting...it will do this awful thing called "seizing," which, I'm told [c.f. paganmommy's excellent technical description down-thread under the cake post: http://www.livejournal.com/users/happypete/226892.html?thread=1104460#t1104460] is the spontaneous separation of the fats and the oils. This turns beautiful whipped cream frosting and yummy chocolate into a nasty, wet, lumpy mess...

In the lemons -> lemonade department, I risked tasting it, and it still tasted good--so I used it for the inter-layer filling, and I used the store-bought frosting for the outside...

Well aren't you clever! Did the recipe give any tips on avoiding seizing? I hate working with chocolate for that reason. It's such a pain and I have no idea how to avoid it.

My other wonderful friend browngirl actually re-wrote the recipe in a "seize-free" way--actually, two ways!

I think Alton Brown showed how to correct seizing on his first Chocolate Good Eats episode. Heck if I can remember what it was, though.

I think you have to add something (water?) one drop at a time until it un-seizes....

HOLY....dude, Altpn Brown is the geek of TV chefs. He totally rules. His show on FoodTV is called Goo Eats, and his website is here. His cookbook is part cookbook, part how cooking works.

Alton is the man.

That's your problem right there---you need to watch Good Eats! You'll *love* it! It's about the science and art and history and whys of cooking!

And Alton Brown is geekily hot, although that likely matters more to me than to you. ;)

His chocolate shows, incidentally, are titled "Art of Darkness".

if you put something warm in it (warm cream) sometimes you can reverse the process.

Alas, warm cream won't whip, so you would have had to chill it again before you whipped it.

Yeah...I think your solutions (pre-combine and chill before whipping or use cocoa powder) are the best way to go.

I made chocolate whipped cream frosting just tonight! I used Ghiradeli cocoa powder instead, though.

and it's what I would have done if I knew that this whole "seizing" thing was such a problem!

Rocks my world! I know most of the stuff he is talking about, but he brings it to a whole new level, a GEEK level. Now I know the whys of it all. Well that and I have the hots for him. *blush* You will find him on the Cooking Channel.
By the way, very good save with the ruined topping! :) You have the makings of a chef in there. :)
